- 6 green peppers
- 1 lb ground beef
- 1 jar spaghetti sauce (get a flavorful sauce to add depth of flavor with ease or make your own which is what I do)
- a small onion
- mushrooms
- 1 cup mozzarella cheese
- 1 cup instant rice
- spices to your taste (I use Lawry’s garlic salt, pepper, and italian seasonings)
Directions:
Heat oven to 375 degrees. In large pot, flash boil green peppers enough to make softer but still firm. In skillet, add oil and sauce ground beef. Add onion and mushrooms until soft. Add the spaghetti sauce, seasonings, and rice to the skillet and cover on medium-low heat. Rice will cook and flavors will deepen. This will take 10-15 minutes. As the filling is cooking, remove the peppers from the boiling water. Cut off the top and hollow out. Put hollowed peppers in a baking dish and fill with the filling. Put in oven for 20 minutes or so. Add mozzarella cheese and put back in oven until cheese is melted.
If freezing, do not put into oven. Add filling from skillet, put cheese on top if desired, and flash freeze. Once frozen, you can wrap individually for later meals.
