Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 garlic cloves, chopped
- ½ cup BBQ sauce
- ½ cup water
- 4 lbs chicken (breasts and/or thighs work)
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Directions
- In a 5-7 quart pressure cooker, heat the oil over medium heat. Add the onion and garlic and cook until the vegetables soften.
- Stir in the BBQ sauce and water.
- Add the chicken and lock the lid in place. Set to Poultry (High Pressure) and cook for 10 minutes.
- Quick release the pressure and open lid.
- Remove and shred the chicken.
- Boil down the remaining liquid on Saute mode (Add some more BBQ sauce and brown sugar to help thicken it up)
- Toss the chicken with the reduced liquid.
- Position the broiler pan 6 inches from the source of the heat and preheat broiler.
- Broil until glazed, 8-10 minutes.
- We like to serve this on top of baked potatoes with cheese and sour cream.
