BBQ Chicken

Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, chopped
  • ½ cup BBQ sauce
  • ½ cup water
  • 4 lbs chicken (breasts and/or thighs work)
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper 
Directions
  1. In a 5-7 quart pressure cooker, heat the oil over medium heat. Add the onion and garlic and cook until the vegetables soften. 
  2. Stir in the BBQ sauce and water. 
  3. Add the chicken and lock the lid in place. Set to Poultry (High Pressure) and cook for 10 minutes. 
  4. Quick release the pressure and open lid. 
  5. Remove and shred the chicken.
  6. Boil down the remaining liquid on Saute mode (Add some more BBQ sauce and brown sugar to help thicken it up)
  7. Toss the chicken with the reduced liquid. 
  8. Position the broiler pan 6 inches from the source of the heat and preheat broiler. 
  9. Broil until glazed, 8-10 minutes. 
  10. We like to serve this on top of baked potatoes with cheese and sour cream.
