- 2 bunches of kale
- 15 oz of sausage of your choice
- 2 cups mozzarella cheese
- 1 cup parmesan cheese
- Fennel seeds (will be grounded)
- 1 jar spaghetti sauce (or make your own)
- Salt
- Pepper
- Garlic
Directions:
Heat oven to 375 degrees. Boil kale for about five minutes. Remove from water and dry out (use a salad spinner if you have one. Drying out the kale is super important. Otherwise the dish gets REALLY watery). In a skillet, saute sausage until browned. Add spaghetti sauce and ground fennel and cover for 15 minutes on low heat. Sausage and fennel is a matched made in heaven. If you aren't sure, still do it. It is SO good.While sausage and spaghetti sauce are simmering, cover the bottom of a 12x9 baking dish with half the kale. Pour half of the sauce mixture on the kale and then 1 cup of mozzarella and ½ cup of parmesan. Repeat the layer (kale first, then sauce mixture, then cheese on top). Cover with foil and bake for 30 minutes. Remove foil and put back in the oven until cheese is melted to your liking. Allow to cool before eating.
