Breakfast Quesadillas

Ingredients

       12 tortillas, brand of your choice
       6 turkey sausage links, pre-cooked
       2 ½ cups of shredded cheese
       ½ avocado, cut into small cubes
       ½ cup chopped spinach
       ½ cup mushrooms
       ½ cup chopped green peppers (I buy the pre-diced frozen bag)
       12 eggs
       ½ cup milk

Directions


  1. Mix eggs and milk together and scramble in a large skillet
  2. Add sausage, spinach, mushrooms, green peppers, and avocado (or any ingredients of your choice!)
  3. On a large cookie sheet, fill each tortilla with some of the egg mixture, sprinkle the top with cheese, and fold in half
  4. Once all tortillas are full, place baking dish in the freezer to set
  5. Once then are set, transfer quesadillas to a large zip-lock bag and place back in the freezer
  6. Each morning, we grill 2 quesadillas on a George Foreman grill
