Ingredients

tortillas, brand of your choice
•
6 turkey
sausage links, pre-cooked
•
2 ½ cups
of shredded cheese
•
½ avocado,
cut into small cubes
•
½ cup
chopped spinach
•
½ cup
mushrooms
•
½ cup
chopped green peppers (I buy the pre-diced frozen bag)
•
12 eggs
•
½ cup
milk
Directions
- Mix eggs and milk together
and scramble in a large skillet
- Add sausage, spinach,
mushrooms, green peppers, and avocado (or any ingredients of your choice!)
- On a large cookie sheet,
fill each tortilla with some of the egg mixture, sprinkle the top with
cheese, and fold in half
- Once all tortillas are
full, place baking dish in the freezer to set
- Once then are set,
transfer quesadillas to a large zip-lock bag and place back in the freezer
- Each morning, we grill 2
quesadillas on a George Foreman grill
