Fruit and Nut Bread





Ingredients:
  • 2 cups whole wheat flour 
  • 3 Tablespoons coconut oil
  • 1/2 teaspoon salt 
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon baking powder 
  • 3 large eggs 
  • 1 teaspoon vanilla extract (optional) 
  • 1/4 cup maple syrup 
  • 1 cup chopped nuts (I used almonds, walnuts, pecans, and pumpkin seeds) 
  • 1 cup of chopped dried fruit (I used dates) 
  • 1 cup of chopped dried fruit (I used blueberries, cranberries, and apricots) 

Directions: 

Preheat oven to 350F. Line a 9-inch loaf pan with parchment paper.

In a bowl, combine all ingredients and mix well.

Mixture will be dense. I rolled mine into a large loaf roll that would fit lengthwise into my pan. Bake in the preheated oven for about 60 minutes.
