Chocolate Peanut Butter Breakfast Bars

Ingredients
  • 32 pitted dates
  • 1/2 cup peanut butter
  • 1/4 cup peanuts
  • 1/2 cup rolled oats or quick oats
  • 1/2 bag dark chocolate bits
Directions
  1. Soak dates in warm water for 10 minutes
  2. Place dates in food processor and pulse until very sticky
  3. Add peanut butter, peanuts, and oats. Pulse until fully incorporated. If you want more crunch, add the peanuts last so they don't get chopped up as much (almonds would work too).
  4. Press mixture into a parchment paper lined 8"x8" baker dish. Place in freezer for 10-15 minutes. 
  5. Heat dark chocolate on the stove or in the microwave until smooth. 
  6. Take bars from the freezer and cut into 10 equal sized portions. 
  7. Dip the bottom of each bar in the dark chocolate. Place upside down to let the chocolate harden. 
  8. Store in fridge or freezer for best consistency.
