Ingredients
- 2 cloves garlic, minced
- 1/2 cup sweet onion, diced
- 1 cup zucchini, diced (optional)
- 1 rotisserie chicken
- 1 (14.5 ounce) can fire roasted tomatoes with liquid
- 1 (6 ounce) can tomato paste
- 1 1/2 cups chicken broth
- 1 tablespoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- Kosher salt, to taste
- 1 (15.5 ounce) can black beans (drained)
- 1 (15.5 ounce) can of corn (drained)
- ¼ cup reduced fat cheddar cheese for garnish
Instructions
- Combine all ingredients in a dutch oven on the stovetop. Bring to a boil, simmer for 20-30 minutes.
- Serve with cheese and avocado, if desired.
