Skinny Chicken Chili






Ingredients
  • 2 cloves garlic, minced
  • 1/2 cup sweet onion, diced
  • 1 cup zucchini, diced (optional)
  • 1 rotisserie chicken
  • 1 (14.5 ounce) can fire roasted tomatoes with liquid
  • 1 (6 ounce) can tomato paste
  • 1 1/2 cups chicken broth
  • 1 tablespoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper
  • Kosher salt, to taste
  • 1 (15.5 ounce) can black beans (drained)
  • 1 (15.5 ounce) can of corn (drained)
  • ¼ cup reduced fat cheddar cheese for garnish

Instructions
  • Combine all ingredients in a dutch oven on the stovetop. Bring to a boil, simmer for 20-30 minutes.
  • Serve with cheese and avocado, if desired.
